This is a great recipe to prepare ahead of time for busy weeks. Some weeks I have more time in the morning than others. The days that we go up to the farm early I like to have something healthy (already prepared) for the boys. I can just grab a quick glass of raw milk or yogurt, but they usually need something more substantial. So here is my version of a homemade fast food breakfast. This is so easy and the kids loved it!
Preheat oven to 350 degrees.
First, I cracked about 9 eggs (pastured) in a big bowl.
Then, I added 1 cup of raw milk and mixed it all together. I shredded I cup of organic cheese (raw works great too) and also sliced 3 organic hotdogs (try too get the best quality available). Mix it all together (add veggies at this point to make it even healthier).
Next, grease muffin pan with oil. And mixture into muffin pan. I am planning on purchasing a glass muffin pan for this recipe in the future. I also want to try these using the little muffin inserts and see if they hold up well.
Pop them in the oven for 20- 25 minutes and you have a great finished breakfast for fast mornings!
The boys loved them and so did I! Great recipe for the whole family. I reheat them in a toaster oven for a few minutes and they are as good as new. No mess for me to clean up! That is another perk
