Kefir Ice Cream

I decided to make a little probiotic ice cream last night.  I used the recipe from here, but changed it up a bit.  I wanted to use what I had in my fridge.  I love last minute recipes that are unplanned and yummy!

Ingredients:

~2 cups kefir (can substitute yogurt, buttermilk, and in my case Amasai)

~1 cup Kefir Cream made with Heavy Cream ( I used 1 cup raw yogurt)

~2 eggs

~2 tsp Vanilla Extract

~ 1 cup Organic Sugar (can use raw honey or agave but reduce the amount by approximately 40%)

1. Beat eggs together well then beat in sugar (start with a conservative amount of sweetener and add in small increments to taste; keep in mind that the finished ice cream will be slightly less sweet than the kefir mixture before it’s frozen).

2. Blend in the kefir cream and vanilla.  Transfer to the ice cream maker and follow the instructions that came with the machine.

For my ice cream maker~ it takes about 25 minutes.

Something I forgot to do this time.  Place glass container (that you are transferring ice cream into) in freezer to cool it down.  This ice cream does start to melt quickly in a warm container.  Transfer to freezer and enjoy! Add fresh fruit or other toppings.  So good!
