Cafe Rio Ranch Dressing

I was a lucky girl today.  My husband decided to make me a special treat for Mother’s Day.  My favorite restaurant in college was a Mexican restaurant called Cafe Rio.  If you have been there, you know what I am talking about.  It is hard to beat.  Here is their awesome dressing recipe.


1 cup milk

1 cup mayonnaise

1 envelope Hidden Valley Ranch Dressing (organic brand)

1/2 cup chopped cilantro

4 small tomatillos (optional- these enhance the dressing, but still ok w/o them)

1/2 tsp. minced garlic

2 T fresh lime juice

1 tsp tabasco sauce

pinch of cayenne pepper (my husband added this just for fun)

~Place all ingredient in blender and mix for 25 seconds.

After tasting this dressing one time, you won’t ever want to eat out Mexican food again (unless you go to Cafe Rio)!
